How to enjoy an authentic Mexican Christmas Always the culture has a way of celebrating Christmas, and Mexico is no different. With the wonderful traditions, you will find an authentic Mexican Christmas is a thing of joy and wonder involving the whole family and lasting much longer than one or two days.
December 16 is the beginning of Posada. Posada famous and follows the journey of Joseph and Mary on their journey from Nazareth to Bethlehem. Two children after dark each night, carrying two small pine cones that have been decorated to represent Joseph and Mary on the burro. There is a procession every night with the kids knock on a door at random to ask for accommodation for the family.
At this stage, people threatening to harm the family if they do not move on, and obviously, this leaves the family pleads for safe haven. Members of the House will again threaten the couple travels, but then the head of the house will appreciate that the couple, and opening the door to greet and welcome the couple with open arms.
Everyone will kneel around the Nacimiento or manager of the stage and sing glorious songs, Ave Maria, and of course, a prayer. Just before Christmas, adding a new verse to the Ave Maria indicates that birth is underway, and at midnight fireworks announce the birth of Christ. There are many wonderful festival, and the whole family eats, drinks, and requests welcome the Child Jesus to the world.
Of course, if you celebrate an authentic Mexican Christmas, you want the best in costumes and foods. Delicious food is a must during a celebration, and it is the kitchen, you find absolutely delicious and beautiful. Filled with Menudo, atole, rice, tamales and other traditional dishes, this is not a day like no other.
Here is a favorite of my own kitchen. What do you like?
Dulce or sweet rice Arroz
3 / 4 cup rice
1 / 2 cup sugar
1 teaspoon Mexican vanilla or real vanilla
4 cups whole milk
1 cup cream
1 / 4 c. teaspoon salt
In short Scald whole milk. Put the rice in one of those deep baking dishes, pour the hot milk over the rice, taking care to cover thoroughly and cook in an oven at 275 degrees for about three hours. You may need to adjust the time and temperature. The rice at this point must be flexible. You want to stir every 10 minutes for the first home to help prevent sticking. Also, you can add more scalded milk if necessary.
Remove from oven about 30 minutes before it is completed. Add sugar, vanilla, cream and mix well. Continue cooking until the end.
Mexican Christmas celebration or Posada would not be complete without the addition of this delicious sweet rice to the table. Both children and adults love this dish of rice with a sweet kick. Celebrating the holiday season has never been so easy or so delicious. In fact, this recipe is also a wonderful dessert for special occasions throughout the year. Feliz Navidad!
